Ingredients:
• 4 ripe pears, stone fruit (when in season) or apples, peeled and quartered
• 1/2 cup raw NZ honey
• 1 cup water
• 1 cinnamon stick
• 2 star anise
• 100g quality blue cheese, crumbled
• 4 thick slices artisan sourdough bread
• Handful of toasted walnuts
• Fresh thyme sprigs
Method:
1. In a saucepan, combine honey, water, cinnamon, and star anise. Bring to a gentle simmer.
2. Add fruit quarters and poach for 15-20 minutes until tender but still holding their shape.
3. Toast sourdough until golden and crispy.
4. Arrange warm poached fruit on plates, drizzle with poaching liquid.
5. Serve alongside toasted sourdough, crumbled blue cheese, and toasted walnuts.
