Method
For Icing:
Beat all ingredients together, adding more icing sugar, liquid as required until smooth and creamy.
- 1 cup wholemeal flour
- 1 cup white flour
- 2 teaspoons baking soda
- 1 ¾ cup raw sugar
- 3 Tbsp Manuka Honey
- 3 cup grated carrot
- ¼ tsp salt
- 2 tsp ground cinnamon
- 1 cup rice bran oil or similar
- 4 large eggs beaten
Icing
- 100gm cream cheese
- 2 cup sifted icing sugar
- 1 tablespoons manuka honey
- 40 gm butter softened
- Squeezy lemon juice
Method
- Sift and mix the dry ingredients
- Add oil and honey and stir well, stir in beaten eggs and then add carrot and mix
- Grease and line a 25cm round baking tin with baking paper
- Pour mixture into tin and bake at 180degrees for 1 hour or until cooked through. Leave to cool then ice. Drizzle with honey just before serving if desired.
