Bird & Barrow – Honey Soy Chicken Drumsticks

Ingredients
1kg chicken drumsticks
1/2c honey
1/4c soy sauce
2T orange juice
1T Dijon mustard
2t garlic, minced
2t ginger, grated

Method

  1. Mix the marinade ingredients together then pour into a large Ziploc bag with the drumsticks. Remove as much air as possible before sealing. Refrigerate for 4 hours or overnight. Preheat the oven to 200˚C and line a rimmed baking dish.
  2. Place the chicken drumsticks in the dish with space in between each and reserve 1/4c of the marinade before pouring the rest in.
  3. Bake for 20 minutes then turn the drumsticks, baste them with the leftover marinade and bake for another 20 minutes.
  4. Baste with the caramelized marinade to finish.
